Lemon Herb Quinoa Salad with Asparagus
& Chickpeas
Cook quinoa according to package directions.

As the season changes, it9s a wonderful time to
refresh our meals with lighter, nourishing
ingredients. This vibrant spring salad is simple,
wholesome, and full of bright favor.
It works beautifully as a light lunch or as a side
dish for dinner gatherings.
Ingredients (Serves 4)
Blanch asparagus in boiling water for 233
minutes until bright green and tender-crisp.
Immediately transfer to ice water to stop
cooking, then drain well.
In a large bowl, combine quinoa, asparagus,
chickpeas, tomatoes, red onion, parsley, and
basil.
In a small bowl, whisk together olive oil, lemon
juice, lemon zest, Dijon mustard, garlic, salt,
and pepper.
Pour dressing over salad and toss gently to
combine.
Salad
Chill for 30 minutes before serving to allow
favors to blend.
